It’s almost Halloween which means it’s time to try out all of the spooky-themed cocktail recipes. This cocktail has a few different variations which makes it the perfect drink to share!
We start with some sweet pomegranate juice and mix that with tequila (or mezcal if you’re partial to a more smokey flavor). Dash in some bitters, cinnamon, sparkling water, and then the creme de la creme – your very own homemade rosemary-infused orange honey simple syrup.
Do you feel frighteningly fancy yet?
No? Well then you can top this cocktail off with a smoking sprig of rosemary to give it the final spooky touch.

Think of this cocktail as a fall margarita (any other tequila lovers out there?).

This recipe will walk you step-by-step on how to make the fancy (and delicious) simple syrup as well as the cocktail itself.

Sleep Hollow Cocktail Recipe
Equipment
- Shaker
- Glassware
- Small pot (for simple syrup)
Ingredients
Rosemary-Infused Orange Honey Simple Syrup
- 1/2 cup water
- 1/4 cup honey
- 1 sprig fresh rosemary
- zest from 1 orange
Sleepy Hollow Cocktail Ingredients
- cinnamon sugar mix (to rim glass)
- 2 ounces tequila or Mezcal
- 1/4 cup pomegranate or cranberry juice
- couple dashes of orange bitters
- 1 dash ground cinnamon
- sparkling water (to top off drink)
- 1 spring fresh rosemary (for garnish)
Instructions
Rosemary-Infused Orange Honey Simple Syrup
- In a small pot, bring 1/2 cup water, honey, and 1 rosemary sprig to a boil over high heat.
- Boil 2-3 minutes, add orange zest (to taste), and remove from heat.
- Let cool.
- Syrup can be kept in a glass jar (refrigerated) for up to 2 weeks.
Sleep Hollow Cocktail Recipe
- Rim glasses in cinnamon sugar mix, if desired (wet rim with wet paper towel first so mixture will stick).
- Combine pomegranate or cranberry juice, tequila or Mezcal, a couple dashes of bitters, a pinch of ground cinnamon, and 1-2 tablespoons of the honey syrup in a cocktail shaker.
- Add ice and shake for 20 seconds to combine.
- Strain into glass.
- Top with sparkling water.
- Garnish with fresh spring of rosemary. If desired, light on fire for a smoky effect.
